This week on the Edgar & Joe’s nutrition blog, we are featuring the roasted chicken kale pesto sandwich and talking about more nutrition. It is made with roasted chicken, Monterey jack cheese, house made kale pesto, tomatoes, and mixed greens on a pretzel bun. This delicious sandwich is a whopping 75 grams of protein, high in calcium, and dietary fiber. Dietary fiber is beneficial for weight management, gastrointestinal tract health, and lowering “bad” cholesterol. You always hear that fiber is healthy for you, but how does this actually work?

In our body, the “bad” cholesterol is known as LDL (low-density lipoprotein) where accumulation in the bloodstream leads to heart disease and plaque build-up. “Good” cholesterol is HDL cholesterol (high-density lipoprotein), it is responsible for lowering LDL cholesterol in your body, this is good!

Dietary fiber also helps lowers this “bad” LDL cholesterol. When you consume fiber, it travels down your digestive tract. Along its way, fiber “traps” LDL in your body all the way to excretion. Therefore, fiber helps you excrete and lower “bad” cholesterol in your body. This reduces the risk of heart disease, weight management, and a healthier digestive tract.
